MAIN BRAZILIAN LEGISLATION ON THE STORAGE, TRANSPORTATION, AND CONSUMPTION OF CHICKEN MEAT AND EGGS: IMPLICATIONS FOR FOOD SAFETY AND PUBLIC HEALTH

Brazilian legislation concerning the storage, transportation, and consumption of chicken meat, eggs, and their derivatives constitutes one of the most comprehensive regulatory systems for animal-origin products, structured around a mandatory industrial and sanitary inspection framework and the establishment of objective technical parameters. This chapter analyzed the main federal regulations underpinning sanitary control, including the Regulation of Industrial and Sanitary Inspection of Animal-Origin Products (RIISPOA), ANVISA resolutions related to Good Practices and microbiological standards, and normative instructions issued by the Ministry of Agriculture and Livestock (MAPA) establishing classification criteria, labeling requirements, and sampling plans. Relevant quantitative limits were presented, such as the absence of Salmonella spp. in 25 g samples, maintenance of temperatures at or below 4 °C for refrigerated products and at or below -12 °C for frozen products, as well as microbiological criteria applicable to processed foods. For eggs, parameters related to weight classification, shell integrity, traceability, and temperature control were highlighted, along with sanitary requirements for pasteurized egg products. The chapter also examined the main bottlenecks of the system, including challenges in harmonizing inspection services, structural limitations in remote regions, difficulties in formalizing small-scale producers, and the need for continuous regulatory updates in response to emerging epidemiological risks. It is concluded that, although robust, the regulatory system depends on effective enforcement, institutional integration, and continuous technological innovation to ensure food safety and protect public health.
