    Resumo

    Olive growing is expanding in Brazil, mainly in Rio Grande do Sul (RS). The olive oil industry has this as the main product, but from the extraction of olive oil, there is significant waste generation. The Prosperato industry, in the municipality of Caçapava do Sul, Rio Grande do Sul, produces olive oil through the biphasic process. The waste generated has high humidity and its correct destination has environmental and economic importance, since it is an industrial byproduct. The chemical composition of the residue resembles those used in animal feed such as% DM,% PB and% NDF, with the main differences being the high levels of% EE and% ADL. The substitution of corn silage for the residue of olive oil (olive pomace) preserved as silage in the diet of lactating cows is a viable alternative, since at levels of 5, 10 and 15% of total dietary there are significant differences in production parameters and milk composition. Although higher levels of EE and ADL significantly alter voluntary intake, this value is not significant when related to live weight. Thus, olive pomace can be used up to 15% of replacement corn silage in the total diet (30% of the bulky) with economic potential and without damages to milk production and composition.
